Honestly, we may not know when the NHL will come back or IF it comes back this season. The NHL has asked the 31 teams to keep dates available for games until late August. It seems hard to believe a couple of weeks have passed since the 2019-20 season went on hiatus. No one can believe what has happened as far as the coronavirus (COVID-19). The amount of death and destruction from this virus is frightening.
This pause gives time to reflect and look out for other ideas and concepts. Hockey players and fitness junkies alike run on a different engine than most. When one adds writing into the mix, other avenues keep on opening.
So, there are some things we plan on doing with “The Hockey Program” as this pause in the sports world continues. The sky is truly the limit. Yes, there will be some hockey in each article but topics like food, exercise for the athlete, and much more will be discussed. It is an open forum now in every way — a program if you will.

A little about me, hockey, and yes the food and more…
Anyone who knows me even a little understands my love of hockey is only exceeded by my love of food and life. This is only the beginning. There will be some recipes for the athlete, tips for training, and what I do on a typical day even. Most people do not work out quite as I do. It is not ordinary. Sometimes you may see something like a random recipe for baked macaroni and cheese.
One can cram a lot of different cheeses into a macaroni and cheese recipe. So, here is what we did.
So, we took one box of macaroni, boiled in salted water for 6-7 minutes and set aside in a strainer. After that, we made an old-fashioned roux (flour, salt, butter, with a touch of cream). After some serious mixing, four cups of milk was poured into the pot. Another tablespoon of flour was added along with a few pinches of kosher salt, garlic salt, and onion salt. Then we slowly cut up an eight-ounce stick of extra sharp yellow cheese. The key is not to achieve perfection but to cut it into crumble sized pieces so that they would melt to start a cheese sauce.
After that, some shredded Monterey Jack and white cheddar cheese were added along with a few slices of provolone cheese. The other vital thing is to keep the heat low to a hair above low. Do not overheat the cheese sauce. Keep gradually stirring and add flour as needed to ensure thickness. If it is done right, little or no additional flour is necessary. Now, hopefully, a little water remains in the strainer where the macaroni has been sitting.
This is important.
Take the cheese sauce and add a little more salt, garlic salt, and onion salt. After this, pour the macaroni into the Ninja Foodi then the cheese sauce. Spoon out as much excess cheese sauce with a spatula if necessary. Stir very well. Finally, melt a third of a stick of butter and pour it into the pot. Sprinkle some bread crumbs over the top and then crisp it at 400 degrees for 5-6 minutes and 360 for a few minutes more. When it is crispy enough, one will hear the sizzle.
This recipe serves at least 6-8 people.
Also, one can dice up some bacon and substitute it for bread crumbs. Also, one can exchange sour cream for heavy cream. Season as appropriate and enjoy!
